[private tour] Tuscany’s tuff towns, wine and hot springs

Food, wine, and thermal springs in the hidden Maremma

A journey into the authentic heart of Terra del Tufo — Sovana, Pitigliano, Sorano — built around the slow rhythms of a Maremma summer. Five nights in a resort hotel inside the historic village of Sovana, a dedicated private driver, tastings of local wines and olive oil, a market-to-table cooking class, and guided visits to the borghi and archaeological sites.

Southern Tuscany is a different land from the postcard version: hills carved into volcanic tuff stone, ancient hilltop villages perched on rocky outcrops, thousand-year-old sunken roads (the Vie Cave) cut by hand into the soft stone. Sovana, Pitigliano, and Sorano — the three borghi of the tuff country — tell three thousand years of continuous history in a small, dense, authentic landscape.

This trip is designed and priced for a group of 3 travelers. Each traveler books individually, but the trip is confirmed only when all 3 bookings have been received.

Travel itinerary

Pitigliano medieval hilltop town in Maremma Tuscany built on volcanic tuff rock with bell tower

Day 1

In the morning, your private driver begins the service by picking up the first traveler in central Rome, then continues to the Port of Civitavecchia to collect the rest of the group as they disembark from their cruise. Departure toward Terra del Tufo — about two and a half hours through landscapes shifting from the coast to the rolling inland hills.

Along the way, a stop at a local winery for a first wine tasting paired with a light lunch — a gentle way to start discovering the flavors of the area before even reaching Sovana.

In the afternoon, arrival in Sovana and check-in at a resort hotel inside the historic borgo: pool, air conditioning, rooms served by elevator, Tuscan or international breakfast. Free afternoon. Dinner at the property, designed to let you rest after the day of travel (beverages not included).

Day 2

Free morning to ease into the rhythms of the land. In late morning, visit to a small local winery: the estate’s agronomist welcomes the group personally, walks you through the vineyard, and leads the wine tasting paired with the merenda toscana (local cheese and cured meats, bruschetta, traditional dessert).

In the afternoon, with a licensed guide, visit to the Sovana archaeological area, the Vie Cave — ancient Etruscan pathways carved into the tuff stone, with walls rising over twenty meters — and the historic center, one of the “Most Beautiful Villages of Italy.”

Dinner on your own. From tonight onward — and for the two evenings that follow — the evenings are deliberately left free: after days rich in tastings, having the space to decide moment by moment (eat out, head back to the hotel, or skip dinner if already satisfied) is part of the rhythm we want to offer. We’ll provide a curated selection of restaurants, trattorias, and agriturismi with à la carte menus.

Day 3

Morning in Pitigliano, known as “Little Jerusalem.” The chef who leads the day is waiting. First stop: a walk through the shops of the borgo to gather the ingredients — butcher, baker, fresh pasta maker, seasonal produce. Then into the kitchen for the cooking class: preparing the dishes together with the chef and lunch with what you’ve cooked, accompanied by a glass of local wine.

In the early afternoon, with a guide, back into the alleys of Pitigliano for its historic corners — the Medici aqueduct, the Jewish quarter, the Orsini palaces. Then a wine tasting at a winery in Pitigliano.

Dinner on your own, among the village’s spots or heading back to Sovana for a relaxed evening by the pool.

Day 4

Free morning at the property — pool, garden, rest — or, for those who wish to add it, the horseback ride option through the Maremma countryside (60-90 minutes with a calm horse and an experienced guide, on a route suited for those who have ridden before but aren’t regular riders — available as an optional service).

In the afternoon, visit to the village of Montemerano — one of the most harmonious medieval borghi of the Maremma, a small jewel enclosed within its walls. Then a wine tasting at a winery in the Saturnia-Montemerano area, to explore the wines of this region — different from and complementary to the denominations of the tuff country.

A stop at the Cascate del Mulino at Saturnia: the 37.5°C sulfurous waters flow freely down through travertine pools in a natural setting. It’s always worth stopping if only for the beauty of the place, then each of you can choose whether simply to take it in or dip your feet (the setting is entirely natural, with no changing rooms or showers).

Dinner on your own. Return to the hotel whenever you prefer.

Day 5

Free morning at the property, or a stroll through the borgo of Sovana at your own pace.

In the afternoon, visit to the borgo of Sorano — the “Matera of Tuscany” — perched on a tuff spur above the Lente River. A guided walk through the village and along a stretch of the Vie Cave.

Then a guided extra virgin olive oil tasting with a mini tasting course at a local farm, with a visit to the olive grove and the mill.

Dinner at the same farm: a traditional fixed menu of Maremma cooking, produce at zero food miles, beverages included. An authentic way to close the journey: at the table of the people who grew what you tasted just a few hours before.

Day 6

Unhurried breakfast, check-out. The private driver accompanies the group back to Rome at the agreed time — Fiumicino airport or your final destination — with comfortable margins
