Cooking Class in Scansano and an Afternoon in Magliano in Toscana

In the Maremma, cooking is a ritual passed from generation to generation. Every dish carries family secrets and a story no guidebook will ever tell: a story made of handed-down gestures and local ingredients that follow the rhythm of the seasons.
This recipe is learned with love, dedication, and by watching closely.
Here you have the chance to learn these old techniques without rushing, from someone who’ll teach you, and help you understand what really goes into a dish.

Travel itinerary

Handmade fresh Maremma tortelli with egg pasta on floured surface, Tuscan tradition

Step 1

In Scansano — the village that gives its name to Morellino di Scansano, the local DOCG Sangiovese red — you’re welcomed into the kitchen of a trattoria where your teacher is waiting. After a short introduction, it’s aprons on, and you start cooking a menu that you’ll enjoy together af.
First you learn how to choose seasonal ingredients — because a good dish starts with good produce. You discover how to work each ingredient with care, the secrets of cooking times, marinades, and seasonings, and how every step builds the character of a dish.
Then you move through handmade first courses, meat, and and last but not least, of course desserts!
The dessert session is part of the experience: you prepare the doughs behind the specialties most rooted in this land.

Step 2

In the afternoon you head to Magliano in Toscana. With your guide, you’ll take a walk through the village streets and along the medieval walls, still perfectly preserved with a view overlooking the Maremma countryside.
