One day in Capalbio between two worlds
Cooking in Maremma is a living legacy, passed down through the gestures of practiced hands. It is a tradition built on seasonality and flavours that speak of every corner of the land.
Capalbio sits on a hill overlooking the Maremma countryside all the way to the sea, among olive groves, vineyards, and Mediterranean scrubland. The medieval walls are intact, the stone lanes narrow and quiet, the small piazzas open onto views that reach the Argentario. It’s called “Little Athens” for its cultural life, and not without reason: here art is as present in the palazzi as in the conversation.

Here you’re welcomed into your teacher’s kitchen, who for one morning guides you through aromas and hands-on techniques. After a short introduction, aprons on, you start preparing the dishes on the menu — afterwards you’ll sit down and enjoy your lunch together.
Maremma cooking wins you over with its simplicity: fresh pasta rolled by hand, meats with bold flavor, desserts that carry the scent of tradition. You work with local ingredients, following the seasons. Hands in the dough, learning techniques, cooking times, and the small secrets that make each dish precise and recognisable.
You’ll also create to desserts, preparing the doughs behind the most loved specialties of this land, closing the morning with the smell of tradition.

In the afternoon, the experience continues with a guided visit to the Niki’s Tarot Garden — the sculpture park created by the French-American artist Niki de Saint Phalle in Garavicchio, near Capalbio: twenty-two monumental sculptures covered in mirrors, ceramics, and coloured glass, inspired by the major arcana of the tarot. A place that’s hard to describe. It simply has to be experienced.
